Twice Baked Sweet Potatoes
Yield 6 servings
6 baked Sweet Potatoes
½ tsp grated orange peel
Juice of 1 medium orange or to taste
1 tsp grated orange rind
1 tsp grated lemon rind
1 tsp grate fresh ginger
Pinch of ground nutmeg
2 to 3 Tablespoon maple syrup or to taste
½ cup light brown sugar
Preheat oven to 350. Cut Sweet Potatoes in half lengthwise. Scoop out skin aside. Puree sweet potatoes in food processor with orange juice, orange rind, lemon rind, ginger, nutmeg and syrup and sugar. Spoon puree into skins. Place on lightly oiled baking sheet; bake until heated through, about 15 min. or heat puree in dish and scoop into hollowed out orange shell.
