Salmon Gieson
Yield - 6 Servings
1 Cup plain dry bread crumbs
½ cup walnuts
1/3 cup butter, melted
4 teaspoons horseradish, divided
4 (7-8 ounce) salmon fillets
Whole grain mustard Sauce
Parsley and Lemon Wedges for garnish
Preheat oven to 400 degrees. Place crumbs and nuts in a food processor; process until coarse and even in texture. Place in a bowl; stir in butter.
Spread 1 tsp horseradish across the top of each fillet. Spread bread crumb mixture over horseradish. Place fillets in a buttered baking dish- uncovered.
Bake for 10 minutes- to brown topping. (baking time will depend on thickness of fillets)
Spoon 1/4 cup mustard sauce over center of each of four warm plates. Carefully place salmon fillets over the sauce. Garnish with lemon wedge and parsley.
